cook your beans in water. About 1 to 1 1/2 hours on low simmer. Then drain
blanche your tomatoes and peel them and chop them. You will need about 12 medium/large tomatoes
cook your bacon and chop it up
brown the ground pork
put peppers/chilies on foiled cookies sheet and oil them well. roast peppers/chilies until charred on the outside. turn often.
take peppers/chilies from oven and put in covered container for 15-20 min to sweat off skin. Then peel off skin and chop.
Ad all ingredients into the crockpot including water from crushed tomatoes.
add all the seasoning and mix well
cook on slow for 5 hours
Top with Shredded Cheese, sour cream, onions, etc.
Cooking Tip: remember that these ingredients can be swapped out for other ingredients that you like more. Also, increase the seasoning as needed for your taste.
