place pig head and pig liver in pot of water completely submerged. Cook until meat is fork tender.
remove pig head and liver and strain and reserve the water in a bowl.
cut off meat from pig head and finely grind with liver.
place back in empty pot and add cornmeal and seasoning and slowly add reserved water until it has the consistency of cooked oatmeal. Cook and stir for about 6 minutes.
scoop into loaf pans and let set in refrigerator overnight.
fry up slices and have on sandwich with white bread and mayo or beside eggs for breakfast.
