use a cast iron skillet to saute onions & garlic in olive oil for 2 minutes or until onions are soft.
add sausage, 1/2 the cilantro, 2 chipotle peppers diced and all the adobo sauce from the can. Saute for about 7 minutes to blend flavors and to ensure sausage is fully cooked.
remove sausage mixture from grease and place in a bowl. clean skillet and warm it up with non stick spray on med/low heat so we can toast the tortillas in it.
lay one tortilla in skillet. Add sausage mixture, fresh cilantro, red peppers and cheese. Once bottom tortilla has browned, lay second tortilla on top and spray again with non stick spray then flip and brown other side.
cut into 4 triangles and serve.
